Whip and Chill buckwheat cereal
2 1/2 cups water
1 cup (6 onces) unsweetened frozen fruit juice concentrate non fat dry milk powder
1/2 cup buckwheat porridge
Combine water and juice concentrate in saucepan and bring to a boil. Slowly sprinkle in milk powder and cereal and beat with a rotary beater until smooth. Cook over low heat until thick, about 7 minutes.
Transfer to a mixing bowl and beat with a rotary beater or electric mixer for about 1 minute at a time at 3 minutes intervals, until cereal is creamy and cool. Spoon into serving bowls and chill. Serve cold with milk and fruit, if desired.
